Prep Time: 30 mins
1 bag fresh gnocci
1 diced onion
2 dozen sliced mushrooms
tinned chopped tomatoes
1/4 pint vegetable stock
generous squirt of crucials chilli ketchup
as much grated cheese as you want (seriously just keep adding more)
ground basil, oregano, salt and pepper
Fry mushrooms and onions over medium heat for 2 minutes, add herbs, salt and pepper and fry for a further 2 minutes
Add the tomatoes, Crucials Chilli Ketchup and vegetable stock, leave to simmer for 10-15 minutes or until sauce is thickening up.
Whilst sauce is simmering, cook the gnocchi according to instructions, once cooked, drain and leave to cool.
When the sauce is thickening up, pour over the gnocchi in an oven proof dish, sprinkle over cheese, grill for 5 minutes or until cheese is golden and melted.
